i was wondering what that means when they say "that" ending when referring to anime, can anyone
shed some light on this?

Um... What anime are "they" referring to? There are literally dozens of anime with endings that could be referred to as "that" ending.

iv'e heard it alot when referring to the actual ending of the story, not the song.
it's weird cuz it's so vague..."blank gets "that" ending"
iv'e heard "it had/has one of "those" endings" as well, but i have no idea what it means, and never really got an explanation...

If you could name an anime, I'm certain I can explain(although I have a meeting in 15 minutes...)

I think you are referring to a translation problem. It dont just occur with endings, but also techniques or other things that dont translate.
Like in Naruto you get people using "that" technique! or something. It like a pronoun for something other than humans, and it doesnt translate well.

"That" ending refers to visual novels, not anime. But when a VN gets turned into an anime, sometimes they use "that" ending as the ending for the show (and then it becomes the cannon ending, blahblahblah, wtf do I know this). The most famous one was School Days. Off to Google you go!
