Nobody really makes them anymore though, and emulators play games almost perfectly. Hell, even my Palm Centro can play GBC...
 
Once again, I was simply entertaining a thought (a tendency of mine), though multi-player, IR (despite IR barely being used), and the "actual feel" would be nice.

Never the less, I am checking with PSP emulators.
 
There are open source designs for GBC flash cards doing the rounds ( http://www.ziegler.desaign.de/readplus.htm among others) and they [edit: must stop skipping around when writing things] can probably be used to form the basis for something here.

Between the cheap/low volume PCB manufacturers appearing and the rise of cheap, high powered and easy to use programmable chips it might be possible to sort out bunch of schematics and have them made to order or batches. I argue this is probably better than waiting for a company to undertake a project.

It might also be worth hitting up the Little Sound Dj circuit to see what they have going on- it might take some fiddling on the saves and multirom front though.
