I love country and I'm not American. Stop being so judgmental and stereotypical, guys...
And not all the songs are hillbilly crap. The game per se might be a load of bullcrap (it's no Rock Band or Guitar Hero, that's for sure), but most of the songs are good.
Carrie Underwood & Miranda Lambert are modern day country, love their music.
Johnny Cash, Tim McGraw, Randy Travis are old school.
Miley Cyrus isn't even country, wtf...they should have put Taylor Swift on that, at least it would sell better (she's country pop).
And where are Lady Antebellum...?

Nope, I'm guessing that would still show every single song but in order of artists.
Something like Zune, iTunes and WMP has got, where it shows you just the artist, then it shows you the albums by that artist, then the songs of that album.

You can filter for anything on Spotify, though the best for that (that isn't cloud) is iTunes. It's heavy on Windows, true, but it's good enough for me for what Spotify can't do.

Spotify? Since you're in the UK, you can use it. It's very light and can play any local media (files on your desktop) and also any song in the cloud library (which makes for listening to new songs/albums a breeze).
If you don't want the cloud aspect, try foobar2000.
