Takes a bit of setup and you have to have both versions of the game bootable but:
1. Get your IP (I used this guide for windows)
2. Download saviine (required even if you have it on wii u since it includes a exe for windows)
3. start saviine on wii u and put in your IP, then Press x, it'd go back to home menu
4. boot dump.bat in saviine download, let it through your firewall
5. start botw eur
6. a window will appear that asks you what to back up, select your user id and click ok. (botw doesn't have common user data.)
7. it'd dump the save to "C:\saviine1.1b\server\saviine_root\dump\00050000-101C9500" once done go back to home menu and close saviine_server.exe
8. copy the 00050000-101C9500 folder to "C:\saviine1.1b\server\saviine_root\inject"
9. rename it to 00050000-101C9400
10. boot inject.bat
11. boot botw us
12. click ok and wait for it to finish and boot into the game, the save should be there
13. have fun

Worked great, thanks! The only issue I ran into was when trying to delete the EUR version from data management, since both installations looked identical. I just looked at the date/time stamp of the save files, and the latest one was the saviine inject so I figured that must be the US version.
