What if I'm sharing cable broadband through my computer, with it acting as a WiFi AP? Would changing the DNS on the WiiU to tubehax be enough to block the servers?

Then modify your host file and point all the addresses to 127.0.0.1.

127.0.0.1 nus.cdn.shop.wii.com

Just make a habit of it to pull the power plug when not playing on your WiiU. That is the safest way in combination with blocking internet completely (i use a non existing gateway in my settings to do that)

Also store it in a Faraday cage to block the WiFi, who knows if Nintendo put some secret battery inside the Wii U to make it power up and update to a hidden worldwide Nintendo Network.
