Would it be possible? To mod a New 3DS with screens the size of the Old 3DS?

Depends on whether the connectors are compatible; they definitely come from different places on the board, so an adapter (that you'd probably be first to invent and make) would most likely be a practical need anyway, and so would be a custom case

Would it be possible to have the OG 3DS screens be Dual IPS?

If you can find them as IPS, why not?
(and is better colors when looking at the screen sideways worth any effort?)
