I mean I want to download the latest Smash Bros EUR update using NUS.
How to know what is the latest update? v96, v112, v400, v1000 ? xD How to be sure to download an update that exists?

Go to https://tagaya.wup.shop.nintendo.net/tagaya/versionlist/USA/US/latest_version - replace USA/US with EU/JP as needed for your region. Check the number the website gives, then go to https://tagaya.wup.shop.nintendo.net/tagaya/versionlist/USA/US/list/XXX.versionlist - Replace XXX with the number you got from the first website and also USA with EU/JP as needed. Then search for your title ID and it will give you the latest version number.

Yeah, but I was having issues with it downloading the last Smash update, kept getting version 80 instead of 160, so now I'm just putting the version I want when I download them to save time and hassle.

Use cdecrypt. I don't have the thread but you can google it. You will need ckey.bin for it, and put cdecrypt, the library.dll and ckey.bin files in the directory with update data in it. The command to run it in command line is:

<update files directory>:\cdecrypt title.tmd title.tik ckey.bin

There will be in the files from the update. Once you get them from NUSgrabber you can check the folder structure and there will be some title items included with the download.

if you download update using NUSGrabber you have title.tmd and title.tik
but if you use uwizard to download update then title.tmd is replaced by tmd.xx (xx is the version of this update) and title.tik is replaced by cetk file
so you can use CDecrypt tmd.xx cetk ckey.bin

or you can select Decrypt data in uwizard to download the update and automatically find extract folder.

Nah, updates, the main game, and DLC all have different keys (though all versions share the same key AFAIK).
