That's not an error. Nintendo put that cap because they really didn't think anyone would play ARMS for more than 3 hours.
Definitely not a cap as you stated, I have 160+ hours on BOTW and keeps climbing. I would simply keep playing and it'll work again.
It doesn't delete the hours that you've played. It just takes the icons off. For example, I deleted the activity log on my 2nd profile. When I launched Odyssey after, it still said 15 hours.
I've done it before. If you really want confirmation, try creating a new user and testing it on that

heh that 5 hour gap had me guessing a while back aswell. But keep playing it will shop up eventually.
I do wish the Switch could basically give me a full report on playtime like other systems have done in the past.

That's really weird have not had that happen with any title. (Quick reference I own 52 titles on Switch, have 10 above the 20 hour mark, with Botw being the biggest one at 420+ hours, Oydssey clocking in at about 75h, Mario + Rabbids at roughly 70 hours that I know from the top of my head.
Can not say for sure for Arms though to be honest ... played that too little till this point.

That's how it works on the 3DS so wouldn't be surprised if it's the same on Switch.
