As a big guy, with big hands, I feel like I'm going to break this thing in portable mode, and using the joycons separately is a joke...

Any chance or accessories out there (Etsy, Amazon, 3D-printing my own damn thing) to add some grip? The nerf armor for the WiiU was a godsend for me...wonder if I can fabricate something along those lines...

I have to agree and I don't even have large hands even at a modest medium size I find the standalone joycons on par with wet bars of soap.

Haven't had that issue, the Joy-Cons are very comfortable and haven't dropped them or felt like breaking them.

I have somewhat big hands but not like, bear hands, and it feels pretty stable to me. I know some people have gotten messed up joycons that wobble, but it normally doesn't seem to have an issue.
