Not sure if you can compare these two... They may look way more similar in the final version and the differences will be even less. The game clearly wasn't finished when we saw it on the wii u:

So they might have tweaked a lot of shaders, lighting and such till we saw the switch demo of the same game. So maybe the WiiU version is a lot more vibriant now, too... Who knows

Also, aside from the resolution bump on the switch, draw detail distance on the switch is also a bit better:

Most noticeable with the "rockier" mountains on the switch and a more cinematic volcano. The tree sprites are also of a higher resolution on the switch in the distance.
Obviously, as I said before, some of it might also make an appearance in the final wii u version... we'll see!

Wut? You are going to buy both versions of the game but not play either one of them? Because online play will cost money and BotW is not an online game?
Wut?

I don't think tying to compare a Wii U build from last year to a Switch build from last week is a sound strategy. I'll wait for Digital Foundry to put out their analysis during launch week. As for the colors people should also consider that the Wii U does not output in full RGB. Assuming the Switch does, that can help explain some of the color differences.

I really don't think BotW is worth buying the switch. I mean, obviously, the Switch performs better, but not 300$ better imo. I might get a Switch when Xenoblade and Odyssey is available.

The Switch is worth buying for one game and one game only. Said no one, ever.

The darker colors of the Wii U version look clean and almost like an upgraded Windwaker, but the Switches healthy lighting effects and detailed textures with improved view distance is the better version. Side by side they both have there Pros and Cons but the Switch version is obviously better. This reminds me of the difference between Ocarina of Time and OoT3D. The N64 ran at 640x480, the 3DS version at 400x240, that's not a remaster, that's a port (The only added feature was the boss rush mode and that's because it was a redux), and thus only had slightly improved character models, slightly improved textures, and a more modern lighting engine. After several replays the better version is the 3DS version because the improvements are noticeable in the long run, especially the motion controlled weapons and improved interfaces. The Switch at 900p will have more detail to work with over the 720p version of the Wii U.

So it's like GTA V on PS3 (Beta console edition) vs PS4 (Definitive console edition) in simple terms.
